Meat Lovers One Pot Chili

I love winter! I love everything about it: the holidays, the cold temps, snow, indoor sports, snuggling up with a cozy blanket and a good book, you get the idea. When I think of winter I think of warm and cozy family time. Hearty comfort food fits right in with all the things that make me so nostalgic about the winter months.
This Meat Lovers One Pot Chili recipe has evolved over the years to suit the ever changing taste buds of my family. It's a pretty basic chili recipe with the addition of polish sausage/kielbasa to make it a bit meatier.
Meat Lovers One Pot Chili
You'll Need:
- 1 lb. lean ground beef
- 1 cup diced onion
- 1/2 cup diced green pepper
- 1 can (15 oz) dark red kidney beans (drained and rinsed)
- 7oz fully cooked Polish/kielbasa sausage, sliced into bite size pieces
- 1 large can (29 oz) tomato sauce
- 1 can (11.5 oz) V8
- 1 can (14.5 oz) petite diced tomatoes (not drained)
- 2 1/2 Tablespoons chili powder
Steps:
- Dice onion and green pepper
- In a large pot brown ground beef. About half way through, add the onion and green pepper. Cook until beef is fully cooked and crumbled and onion and green pepper are softened. Drain fat if needed.
- Add remaining ingredients, stir well, and bring to a simmer. Reduce heat and simmer about 15 minutes.
- Enjoy!
Tips:
- This chili is great topped with crackers, shredded cheese, and/or sour cream.
- To make it even meatier, serve it with crumbled bacon on top.
- I often make this chili early then transfer it to a crock pot on the warm setting. Then dinner is ready and waiting when we return home from evening activities.
- To complete the meal, serve with a salad and cornbread.
